Tomato Shrimp Curry (Step-by-Step Recipe)

Shrimp (cleaned and deveined) – 500 g
Tomatoes (finely chopped or blended) – 3 medium
Onion (finely sliced) – 1 medium
Garlic paste – 1 teaspoon
Ginger paste – 1 teaspoon
Green chili (optional, chopped) – 1 to 2
Turmeric powder – 1/2 teaspoon
Red chili powder – 1 teaspoon
Coriander powder – 1 teaspoon
Cumin powder – 1/2 teaspoon
Salt – to taste
Sugar – a pinch (optional)
Cooking oil – 3 tablespoons
Fresh coriander leaves – for garnish
Water – as needed
Cooking Steps
Step 1: Prepare the Shrimp
Wash the shrimp thoroughly and drain excess water.
Marinate with a little salt and turmeric powder.
Set aside for 10 minutes.
Step 2: Lightly Fry the Shrimp
Heat 1 tablespoon oil in a pan.
Lightly fry the shrimp for 1 minute on each side.
Remove and keep aside. Do not overcook.
Step 3: Make the Masala Base
In the same pan, add remaining oil.
Add sliced onions and sauté until golden brown.
Add ginger paste, garlic paste, and green chili.
Cook until raw smell disappears.
Step 4: Add Tomatoes and Spices
Add chopped or blended tomatoes.
Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt.
Cook on medium heat until oil separates from the masala.
Step 5: Add Water and Simmer
Add a small amount of water to make gravy.
Let it simmer for 3 to 5 minutes until the sauce thickens.
Step 6: Add Shrimp
Add the lightly fried shrimp to the gravy.
Cook for 3 to 4 minutes on low heat.
Add a pinch of sugar if desired and adjust salt.
Step 7: Final Touch
Turn off the heat.
Garnish with fresh coriander leaves.
Serve hot with steamed rice or naan.
Cooking Tips
Do not overcook shrimp as they become rubbery.
Use ripe tomatoes for better color and flavor.
Adjust chili according to spice preference.
